This inky black Alexander Valley Cabernet Sauvignon begins with aromas of blackberry compote, dried Bing cherry, pomegranate, and hints of earthy terroir, all framed with notes of vanilla and lightly-roasted dill from aging in American oak barrels. Flavors of black raspberry and boysenberry, dark chocolate-covered cherries, dried tarragon and toasted coconut are then complemented by a fresh blackberry and toasted brioche finish.
Most of the fruit used to make this wine came from Alexander Valley’s Lost Acre Vineyard, which brings a lot of power due to the small, intense size of the fruit at harvest, as well as extremely ripe tannins. A smaller block of Cabernet Sauvignon from an Alexander Valley vineyard located a bit further to the north provides bright aromatics and structure. To balance the absolute power of the blend, Lodi Cabernet Sauvignon was also blended in to add some finesse. The fruit didn’t have to hang long to achieve this balanced wine, which was bottled following 14 months of aging in American oak. Delicious now, it will evolve and continue to improve with age over the next 5 years.
This wine will shine with grilled filet mignon and a classic baked potato with sour cream and chives, as well as intense-flavored cuisine such as lamb kabobs over couscous and roasted parsnips or a simple, savory steakhouse burger pumped up with duck fat fries.
